Hungry for something yummy and even healthy? For a snack? How about for Lunch? Or maybe as a Side to with Dinner? Boy Howdy, do I have the recipe for you! It is a recipe from Trina Boice from Carlsbad, California.
Cowboy Caviar
2 Tablespoons red wine vinegar
2 teaspoons olive oil
1 clove garlic, minced or pressed
1 1/2 teaspoons hot pepper sauce (Tabasco)
fresh ground black pepper
1 ripe avocado
1 (15-ounce) can black beans
1 (15-ounce) can pinto beans
1 (16-ounce) can corn
2/3 Cup sliced green onion
1/2 Cup chopped fresh cilantro
1/2 pound Roma tomatoes, chopped
salt to taste
In a large bowl, combine vinegar, oil, garlic, hot sauce and pepper. Peel, pit and cut avocado into 1/2-inch cubes. Add to the vinegar mixture and toss lightly. Drain and rinse beans and corn. Add beans, corn, onion, cilantro and tomatoes. Mix gently to coat. Add salt and pepper to taste. Serve with tortilla chips. It is also great as a relish with grilled chicken or steak.
